4 Different & Delicious & Easy Poke Cake Four Ways

Don’t try to poke holes in this theory: these flavor-drenched cakes are simple, different, and delicious.

CHOCOLATE TURTLE POKE CAKE

1 freshly made chocolate cake, prepared from scratch or using a packaged mix

1 (14-ounce) can of dulce de leche, warmed

1 (16-ounce) can of chocolate frosting

½ cup chopped pecans

½ cup mini chocolate chips

Caramel syrup, to taste

  1. Using the back of a wooden spoon, poke at least 3 rows of 4 holes in the cooked cake, making at least 12 holes total. Pour the dulce de leche over the cake and let it settle into the holes for about 10 minutes. Some of the dulce de leche will still stay on top, which is okay. If necessary, it can be reheated or mixed with a little milk to be thinned.
  2. Spread the chocolate frosting evenly on top of the cake. Sprinkle the chopped pecans and mini chocolate chips on top of the frosting, and then drizzle with the caramel. Chill the cake for at least 3 hours or up to overnight.

PEANUT BUTTER BANANA POKE CAKE

1 freshly made yellow cake, prepared from scratch or using a packaged mix

4 bananas, 2 mashed and 2 sliced

1½ cups creamy peanut butter, melted

1 (14-ounce) can of sweetened condensed milk

8 ounces frozen whipped topping, thawed

½ cup roasted peanuts, chopped

  1. Using the back of a wooden spoon, poke at least 3 rows of 4 holes in the cooked cake, making at least 12 holes total.
  2. In a large bowl, mix 2 mashed bananas, 1 cup of the melted peanut butter, and the sweetened condensed milk; if needed, add extra milk to loosen the mixture. Pour the mixture over the cake and let it settle into the holes for about 10 minutes. Some of the mixture will still stay on top, which is okay.
  3. Spread the whipped topping evenly on top. Place sliced bananas on the topping, drizzle the remaining ½ cup of melted peanut butter on top, and sprinkle with the roasted peanuts. Chill the cake for at least 3 hours or up to overnight.

COOKIES AND CREAM POKE CAKE

1 freshly made chocolate cake, prepared from scratch or using a packaged mix

1 packet cookies-and-cream pudding mix

1 cup milk

8 ounces frozen whipped topping, thawed

1 cup crushed chocolate cookies, plus additional for topping

1 (14-ounce) can sweetened condensed milk

  1. Using the back of a wooden spoon, poke at least 3 rows of 4 holes in the cooked cake, making at least 12 holes total.
  2. In a large bowl, add the packet of pudding mix and the milk, and whisk until there are no lumps. Add the whipped topping and the crushed chocolate cookies. Stir until well combined and set aside.
  3. Pour the sweetened condensed milk over the cake and let it settle into the holes for about 10 minutes. Some of the mixture will stay on top, which is okay.
  4. Spread the pudding mixture over the cake and smooth it out evenly. Sprinkle extra crushed cookies on top. Chill the cake for at least 3 hours or up to overnight.

BERRY CHEESECAKE POKE CAKE

1 freshly made vanilla cake, prepared from scratch or using a packaged mix

2 cups strawberries, stems removed

8 ounces cream cheese, softened

1 (14-ounce) can of sweetened condensed milk

1 cup blackberries, mashed

1 cup raspberries, mashed

8 ounces frozen whipped topping, thawed

Crumbled graham crackers, for topping

Sliced strawberries, blackberries, or raspberries, for topping

  1. Using the back of a wooden spoon, poke at least 3 rows of 4 holes in the cooked cake, making at least 12 holes total.
  2. In a large bowl, mash the strawberries with a potato masher or fork until mashed to a pulp. Add the cream cheese and condensed milk, whisking until there are no large lumps. Add the mashed blackberries and raspberries; stir just once or twice so the colors remain differentiated. Pour the mixture over the cake
  3. and let it settle into the holes for about 10 minutes. Some of the mixture will still stay on top, which is okay.
  4. Spread the whipped topping evenly on top. Sprinkle graham crackers on top and add sliced strawberries or other fresh berries. Chill the cake for at least 3 hours or up to overnight.
