Breakfast Vegan Buttermilk Pancakes

These are the most awesomest vegan pancakes ever! This will be your go-to recipe to serve up hot, fluffy pancakes with a side of deliciousness each time.

Serves 4 to 6

2 flax eggs

2 cups coconut milk

1 tablespoon apple cider vinegar

2 cups all-purpose flour

2 teaspoons baking powder

1 teaspoon baking soda

2 tablespoons organic sugar or monk fruit sweetener

Pinch of salt

1 teaspoon vanilla extract

1/2 teaspoon vegan butter

Mixed berries

Maple syrup

Powdered sugar

Prep the flax eggs and put them in the refrigerator to thicken up for 5 minutes. In a small bowl, mix the coconut milk and vinegar together and let set for 5 minutes. This makes vegan buttermilk.

In a large bowl, whisk together the flour, baking powder, baking soda, sugar, and salt. Add the flax eggs and vanilla to the vegan buttermilk and whisk to combine.

Pour the wet ingredients into the dry ingredients and mix well using a fork. Do not over mix; it is okay if there are small lumps left in the batter. 

Heat a large skillet or griddle over medium heat and melt the butter. Pour 1/2 cup of the batter onto the skillet and cook both sides of the pancake until golden brown. Serve with mixed berries, maple syrup, and a shake of powdered sugar.


  • Have your child measure out the dry or wet ingredients while you do the other. 
  • Let them mix the batter, and you can totally taste it because it’s vegan.
  • When the pancakes are done, let your child help top with berries or sprinkle with powdered sugar.
