Broccoli and Quinoa Breakfast Patties

Made with broccoli, quinoa, carrots, and flax seeds, this is truly a healthy addition to your morning routine. It is sure to hit a home run with the fam.

Makes approximately 10 patties

1 cup uncooked quinoa

2 cups low sodium vegetable broth

1/2 cube vegetable bouillon, optional

1 cup shredded broccoli and carrot mixture

2 flax eggs

1/2 cup gluten-free breadcrumbs

2 cloves garlic, minced

1-1/2 teaspoons garlic powder

1-1/2 teaspoons onion powder

2 teaspoons fresh or dried parsley

2 tablespoons coconut oil or extra virgin olive oil, plus extra for cooking

Salt and pepper, to taste

Chopped fresh parsley, optional

Green onions, sliced, optional

Rinse quinoa thoroughly and place in a saucepan with vegetable broth and vegetable bouillon, if using. Bring to a boil, reduce heat, and let sim

Vegan Sour Cream

Chopped fresh parsley, optional

Green onions, sliced, optional

Rinse quinoa thoroughly and place in a saucepan with vegetable broth and vegetable bouillon, if using. Bring to a boil, reduce heat, and let simmer for 15 minutes. The quinoa will absorb all the broth.

In a large bowl, add cooked quinoa, broccoli mixture, flax eggs, breadcrumbs, garlic,garlic powder, onion powder, parsley, 2 tablespoons oil, and salt and pepper; mix well to combine.

Drizzle a little oil into a skillet over medium heat. Make palm-size balls out of the mixture. Place in skillet and flatten with a spatula. Cook on both sides for 2 to 3 minutes, or until crisp and golden brown. Place patties on a plate lined with a paper towel to drain. Serve warm with sour cream, parsley, and onions.

Store leftovers in an airtight container in the refrigerator for up to 5 days, maybe a little longer. Enjoy!

KID HELP

  • Let your kids make the balls out of the mixture. This will give them a direct hands-on experience.
  • Have your kids top the patties with sour cream and onions.
  • Let your kids be the taste testers.
