Eating oatmeal in the morning is a great way to fuel up to stay full longer. Turning it into a bake and adding chocolate chips makes it so much fun. And besides, chocolate chips make everything better!
2 cups rolled oats
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
Pinch of salt
1-1/2 teaspoons vanilla extract
1/2 cup coconut sugar or brown sugar
1-1/2 cups almond milk
2 tablespoons maple syrup
1 mashed banana
1 cup dairy-free chocolate chips
1 handful shredded coconut, optional
1 cup organic powdered sugar
5 tablespoons almond milk
1 teaspoon vanilla extract
Dairy-free yogurt, optional
Preheat oven to 350 degrees. Prepare a 9 x 9-inch baking dish with nonstick cooking spray.
Place all ingredients except the chocolate chips and coconut in a large bowl and mix well. Fold in chocolate chips. Place mixture into baking dish and spread evenly over the bottom. Top with coconut, if using.
Bake for 30 minutes. Remove from oven and let cool for 5 minutes.
Combine the ingredients together in a small bowl until mixed. Drizzle icing over the top and serve.
Note: Rather than drizzling with icing, you can also use yogurt. You can dollop it on top, or add some yogurt to a ziplock bag and cut off a small corner, and pipe on a design.
- Give your child some ingredients to add into the bowl then let them mix it up (as best they can). When they are done, you can give it a good whirl if needed.
- Have your child mash the banana—kids love mashing things!
- Let the kids drizzle the icing, and then lick the spoon!
