These blondies are nutritious, full of delicious healthy fats and fiber, and most importantly, stuffed with creamy almond butter, bananas, and chocolate!
2 bananas, mashed
3/4 cup almond butter, plus extra
2 teaspoons vanilla extract
1/2 tablespoon coconut oil, melted
1/2 cup almond milk
1/3 cup coconut sugar
1-1/2 cups almond meal
3 tablespoons coconut flour
1-1/2 teaspoons baking powder
1 teaspoon baking soda
2 tablespoons cornstarch or arrowroot flour
Pinch of salt
1 cup carob chips or any other dairy-free chocolate chips
Preheat oven to 350 degrees. Prepare a 9 x 9-inch baking pan with nonstick cooking spray and line with parchment paper.
In a large bowl, mix together the bananas, almond butter, vanilla, oil, and milk until creamy. Add the sugar, almond meal, flour, baking powder, baking soda, cornstarch, and salt; mix well. Fold in carob chips.
Pour batter into pan and smooth top. Sprinkle more carob chips on top, if desired, and bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean. Remove from oven and let cool in the pan for 5 minutes. Remove blondies from pan and cut into squares. If desired, heat 1 tablespoon of almond butter until melted and drizzle over blondies.
Store, covered, at room temperature or in the refrigerator.
Note: Some almond butters are oilier than others, so if necessary, reduce measure to 1/2 cup.
- Let your kids mash up the bananas.
- Let them help mix batter.
- Before baking, let kids top sprinkle more carob chips over batter.
