These colorful balls make a great snack or addition to your meal; they are loaded with vitamins and protein.

(Makes about 30)

4 cups shredded carrots

1 cup ground almonds

1 cup pumpkin seeds (pepitas)

1 cup chia seeds

1 cup dried goji berries

1 cup dried mulberries

1 cup shredded unsweetened coconut

1 cup maple syrup

6 dried dates, pitted

Combine everything in a food processor (you may have to divide the batch, depending on the size of your food processor). Blend for 30-90 seconds, until the nuts are chopped (you can alter this depending on how fine or chunky you’d like your batter). Remove from the processor and place in a bowl. Chill the batter in the fridge for 15-30 minutes. Roll small pieces of batter into balls the size of a golf ball (you can vary this, too). They will keep in the fridge for about a week. Enjoy!
