LOBSTER TACOS

FOR THE LOBSTER:

3 pounds fresh lobster meat, cut into bite-size pieces

1 cup mayonnaise

½ cup chopped fresh basil or tarragon

¼ cup fresh lemon or lime juice (from 1 lemon or 2 limes)

Salt and pepper to taste

FOR THE PICO DE GALLO:

6 Roma tomatoes, seeded and diced

1 cup diced red onion

1 cup chopped fresh cilantro

½ cup fresh lime juice (from 2 limes)

3 garlic cloves, finely chopped

Salt and pepper to taste

FOR THE BAJA SAUCE:

1 cup sour cream

1 cup chopped fresh cilantro

½ cup mayonnaise

½ cup fresh lime juice (from 2 limes)

3 poblano peppers, charred, peeled, stemmed, seeded, and chopped

2 tablespoons hot sauce

12 (6-inch) corn or flour tortillas

½ small head green cabbage, cored and shredded

Queso fresco (Mexican farmer’s cheese), or regular farmer’s cheese

For the lobster: Combine the lobster meat, mayonnaise, basil, and lemon or lime juice in a bowl and toss gently until evenly mixed. Add salt and pepper to taste. Set aside.

For the pico de gallo: Combine the ingredients in a bowl and mix well. Season with salt and pepper and set aside

For the lobster: Combine the lobster meat, mayonnaise, basil, and lemon or lime juice in a bowl and toss gently until evenly mixed. Add salt and pepper to taste. Set aside.

For the pico de gallo: Combine the ingredients in a bowl and mix well. Season with salt and pepper and set aside.

For the Baja sauce: Place the ingredients in a food processor fitted with a steel blade and blend until smooth. Transfer mixture to a squeeze bottle.

To assemble the dish: Place 2 tortillas on each plate. Mound some cabbage on each tortilla. Divide the lobster meat among the tortillas and top each with 2 to 3 tablespoons pico de gallo, a sprinkle of queso fresco, and a drizzle of Baja sauce.
